What is White Tea?

White tea is a tea that comes from the Camellia sinensis plant (aka the tea plant). The same plant that produces black tea, green tea and oolong tea. White tea is generally lighter than green tea, however, not all white teas are created equal. Usually white tea is more delicate than other types of tea and the liquor is usually light and the texture of the tea is soft.

When closely inspecting white tea, you will notice that the leaves are furry! This is a result of the leaves being picked earlier than other types of tea and that white tea is minimally processed.

Is There Caffeine in White Tea?

There is caffeine in tea. Caffeine is found naturally in many plants including tea. White tea is usually considered to have the lowest amounts of caffeine of all the types of tea, however, this is not necessarily true. Depending on the type of white tea and how it has been processed, white tea can contain up to 75mg of caffeine per cup. Tea does contain L’Theanine, white tea especially contains high amounts of L-Theanine. This is known to counter balance some of the negative effects of caffeine. Are Nectarines and Peaches the Same Thing?

This recipe uses nectarines, however, you can switch and use peaches as an alternative. The difference between nectarines and peaches is that peaches have a thicker furry skin and nectarines have a thinner smoother skin.

Can you Make Iced Tea With Tea Bags?

You can use loose leaf tea or tea bags for any of my recipes. Here in this iced tea recipe, use 1 tea bag per 1 heaped teaspoon of loose leaf tea. This recipe makes a large jug of iced tea which calls for 10 heaped teaspoons of loose leaf white tea, you can substitute this for 10 tea bags of tea. However, depending on your tastes, you can use more or less tea.

Can you use Green Tea in This Iced Tea?

This recipe calls for white tea as white tea goes so beautifully with peaches and nectarines. But you can use white tea or green tea in this recipe. It would even work with oolong tea or black tea. However, it maybe best to avoid flavoured or scented teas as it may affect the overall taste of your finished iced tea. The beauty of tea is that there are so many flavour combinations to try out and experiment with.

How to Make Iced White Tea with Fresh Raspberries & Nectarines From Scratch

Here’s how to make this super summery white iced tea with fresh raspberries and nectarines from scratch:

INGREDIENTS (Serves 6)

  • 10 Heaped Teaspoons of White Tea

  • 2 Peaches or Nectarines - Sliced

  • 1 Cup of Raspberries

  • 3-4 Tablespoons of Honey/Agave/Sugar

  • Optional Fruit and Mint Sprigs to Serve

METHOD

  • In a medium saucepan, add 5 cups (40fl oz) of water, raspberries, nectarines and honey. Bring to a gentle simmer and set aside to cool for 10 minutes.

  • Add the white tea and allow to steep for a further 3-5 minutes.

  • Pour over large glasses of ice though a fine mesh strainer to remove the tea leaves and the fruit pulp.

  • Add slices of fruit, berries and mint sprigs to serve.
