Iced Earl Grey Tea Latte with Lavender Honey

Using lavender infused honey is purely optional, so if you don’t have the time or patience to prepare the lavender honey, use regular honey instead (or shop bought lavender syrup or even vanilla syrup for an iced London fog). However the taste of homemade lavender infused honey in this creamy iced tea really brings it all together just perfectly. It comes highly recommended but it is all down to personal preference.

What is Earl Grey Tea?

Earl grey tea is a very British black tea blended with bergamot oil. Legend has it that Earl grey tea was discovered by accident. Bergamot had been stored next to tea leaves, tea is very porous and so soaked up the wonderful bergamot oil aromas super easily. Thus bringing about the Earl grey tea that we know and love. The types of teas used to create this blend has changed over the years, but the essence of the tea that is the bergamot oil has remained the same, just as we know and love today.

How to Make an Earl Grey Tea Latte at Home

Making an iced earl grey latte from scratch is as easy as making any other tea latte. Firstly, you will need to make lavender infused honey or alternatively purchase lavender/vanilla syrup or any of your favourite sweetener. In a small saucepan warm any milk of your choice, add your cream and sweetener. Turn off the heat and infuse your Earl grey tea. Remove the leaves and create some latte like bubbles with a milk frother or an immersion blender. Add a dollop of cream or homemade coconut cream and a extra drizzle of lavender honey on top. It’s simply perfect!

  • Want to make it iced? Pour over a large glass of ice, add optional whipped cream or a scoop of vanilla ice cream and an extra drizzle of lavender honey!

  • Want to make it hot? Serve as it is with a dollop of whipped cream and an extra drizzle of lavender honey!

  • Want to make it a London fog? Sweeten with vanilla syrup instead of lavender syrup!

  • Want to make it tipsy? Make it tipsy hot or tipsy iced and add a shot of your favourite tipple. I recommend a shot of vanilla vodka or orange gin! To make it even more indulgent, add whipped cream, ice cream and an extra drizzle of lavender honey!

INGREDIENTS (Serves 2)

  • 4 Heaped Teaspoons of Earl Grey Tea

  • 1 Cup (8 fl oz) of Almond Milk or Milk of Choice

  • 1/2 Cup (8 Tablespoons) of Coconut Cream or Non Dairy Creamer or Cream

  • 2 Tablespoons of Lavender Infused Honey

  • Optional Whipped Cream to Serve

METHOD

  • In a saucepan, warm the milk, cream/creamer and lavender infused honey.

  • Once heated and combined remove from the hob, add the earl grey loose leaf tea and allow to infuse for 7-10 minutes.

  • Remove the leaves using a fine mesh strainer, and create some bubbles with an immersion blender.

  • Add ice to 2 large glasses and pour the tea over the ice.

  • Add optional whipped cream and enjoy :)
