How to Make a Dirty Chai Latte With Dalgona Coffee

How to Pronounce Dalgona Coffee

Before we look at making this creamy, fluffy, mousse like coffee topping, how do we actually say it? Dalgona is pronounced just the way it is spelt: ‘dal-go-na’.

What is a Dalgona Coffee?

Dalgona coffee was first discovered by Korean actor Jung Il-woo who said that the taste reminded him of a Korean candy called dalgona. Dalgona is a type of golden honeycomb toffee. And that’s why I decided to add sweet honeycomb toffee to make this dessert-drink extra naughty.

What is a Dirty Chai?

A dirty chai is called a dirty chai because it is a cross between a coffee and spiced tea. A dirty chai is made with coffee and the addition of spicy chai, or chai with the addition of coffee. It’s the mix of the two that makes it a bit dirty! You can also make a dirty chai latte by adding a shot or two of espresso to your milky tea latte.

Is Dalgona Coffee Served Iced or Hot?

A dalgona can be served hot or iced. You can spoon a dollop of dalgona coffee on top of ice cold milk or hot steamed milk. To make this dirty dalgona iced, follow the instructions below with half the amount of milk and pour over ice. Add your dalgona coffee on top. Enjoy with a spoon or simply sip it.

What Makes Dalgona Coffee Fluffy?

A dalgona coffee is made just like whipped cream, the mix of the granulated coffee and the sugar helps stabilise the light airy bubbles that dalgona coffee is so famous for. Coffee contains a small amount of protein and fats that work just perfectly to create foamy bubbles. Adding sugar to the coffee and water helps stabilize the bubbles. Without the added sugar, the foam will start to turn back into liquid after a few minutes.

How Long Does Dalgona Coffee Last?

Dalgona coffee will last a day or two after making it. If you have made a big batch of dalgona coffee and want to reserve some for another time, cover it and keep it in the fridge for up to 2 days.

How to Make a Dirty Dalgona Coffee From Scratch

To make the dalgona coffee topping, use equal amounts of instant coffee, sugar and water. Mix with an electric mixer, this will take at least five minutes of serious whipping to become really fluffy. Once you have made the dalgona coffee topping, make your milky chai. In a saucepan, heat your milk, cream and honeycomb. Once everything is heated through, turn off the heat and add the tea. Allow to infuse before removing the leaves or tea bags. Pour the chai into cups and top with your dalgona topping. Crumble more honeycomb on top for extra indulgence. Enjoy :)

INGREDIENTS (Serves 2)

For the Dalgona Coffee:

  • 2 Tablespoons of Instant Coffee

  • 2 Tablespoons of Granulated Sugar

  • 2 Tablespoons of Freshly Boiled Water

For the Masala Chai:

  • 3 Teaspoons of Masala Chai

  • 2 Cups (16fl oz) of Almond Milk or Milk of Choice

  • 1/4 Cup (4 Tablespoons) of Coconut Cream or Cream

  • 20g of Golden Honeycomb Toffee

  • Extra Golden Honeycomb Toffee to Decorate - Optional

METHOD

  • In a small mixing bowl, combine the instant coffee, sugar and hot water (I like to use brown sugar). Using an electric mixer, whisk the ingredients on high for about 5 minutes until the coffee is smooth and whipped. Set aside while you make the sweet masala chai.

  • In a small saucepan, heat the milk, cream and honeycomb toffee until it starts to bubble and everything is combined. Remove from the heat and add the masala chai loose leaf tea.

  • Allow to infuse for 5-7 minutes and remove the leaves using a fine mesh strainer.

  • Pour your prepared chai into cups, spoon on the dalgona coffee over the tea and sprinkle with golden honeycomb toffee (optional).

  • To make this iced, use only 1 cup (8fl oz) of almond milk and pour the mixture over ice, add the whipped Dalgona coffee and sprinkle with golden honeycomb toffee.
