How to Make Refreshing Pimm’s with Hibiscus Tea, Fresh Berries and Mint

The hibiscus tea adds a floral and tangy element to the drink, while the fresh berries provide a sweet and juicy flavor. The addition of mint leaves adds a refreshing and cooling effect, making this cocktail a perfect choice for a warm summer day.

Pimms is usually mixed with lemonade (sprite), sliced strawberries, orange wedges, slices of cucumber and mint sprigs. I thought that I would mix things up a little and give this very British cocktail a unique tropical tea twist.

Did you know that teas and herbs work amazingly in mocktails too? To enjoy this drink as a virgin mocktail, leave out the Pimm’s, add the ice, chopped fruit and top with a mint garnish for a very fancy iced tea.

How do you use Dried Hibiscus Flowers Instead for This Cocktail?

I’m using fresh hibiscus flowers and fresh mint too to make my Pimm’s with hibiscus cocktails. If you aren’t able to source fresh hibiscus flowers, you can use dried hibiscus flowers instead. I would recommend using 1 teaspoon of dried flowers per two whole fresh flowers. So that’s one teaspoon of dried hibiscus or two fresh flowers per one cup of water used.

What Alcohol is in Pimm’s?

Pimm’s is a very British drink that’s super popular during the summer months. The alcohol in Pimm's is gin. Traditionally mixed with lemonade (sprite), cucumber, mint and strawberries.

What Does Pimm’s Taste Like?

Can you Drink Pimm’s Straight?

I’m sure that you could drink Pimm’s on the rocks or straight, however, it is a drink designed to be mixed with other soft drinks such as lemonade to make a summer time cocktail.

How to Make Pimm’s Cocktails with Hibiscus and Fresh Berries

INGREDIENTS (Serves 8)

  • 10-12 fresh hibiscus flowers (or 5-6 teaspoons of dried hibiscus)

  • Large handful of fresh mint - plus extra for garnish

  • 200g (1 cup) of sugar

  • 200g (1 cup) of berries - plus extra for garnish

  • 1 large orange - plus extra for garnish

  • Juice from 1 lemon

  • Pimm’s (omit the Pimm’s for virgin cocktails/mocktails)

  • Lots of ice

METHOD

  • Firstly, remove the leaves, stem and pollen part of the hibiscus flower. Thoroughly wash the petals to remove any stray bugs and pollen.

  • Boil 4 cups of water in a saucepan and then turn off the heat once it reaches boiling point.

  • Next, add the sugar and stir until it dissolves.

  • Add the hibiscus petals and mint leaves and place the saucepan lid back on to lock in all of those lovely essential oils and aromas.

  • Allow to infuse for 10-15 minutes before straining out the petals and mint. It’s best to not over steep the petals or it will turn bitter.

  • Add the lemon juice and allow to cool a little.

  • In a jug, add lots of ice, berries and slices of orange. Pour over the hibiscus tea.

  • Add a shot of Pimm’s, slices of oranges, berries, mint and ice to each glass and top up with the hibiscus iced tea.

  • Feel free to omit the Pimm’s to enjoy a delicious Pimm’s mocktail :)
