Ingredients (Serves 2)

2 cups of Moroccan mint tea - frozen into ice cubes

4 oz (2 shots) of white rum

1/4 Cup of simple syrup - to taste

Handful of mint leaves (plus extra for garnish)

Juice of 1 lime (plus extra for garnish)

METHOD

  1. To make the Moroccan mint tea ice cubes, use 3-4 heaped teaspoons of loose leaf for two cups of water. Use water that is almost at boiling point (80*C/175*F). Let steep for 3-5 minutes, pour into ice cube tray and place in the freezer ready for your cocktail making.

  2. To make the cocktail, place the rum, lime juice and simple syrup into a blender and combine.

  3. Next, add the mint leaves and ice cubes and blend again into a slushie type consistency.

  4. Pour into glasses and add slices of lime and mint sprigs.

Feel free to omit the white rum for a delish virgin cocktail!
